These fresh shrimp spring rolls are light, colorful, and easy to customize. They work well for lunch, entertaining, warm-weather meals, or as a make-ahead appetizer. The combination of shrimp, noodles, lettuce, cucumber, carrot, and red bell pepper gives every bite crunch and balance, while Alexandra’s Pikliz® Spicy Pepper Relish adds a bright, punchy finish.
This recipe is especially good when you want something that feels clean and fresh, but still exciting.
A lot of spring roll recipes rely only on herbs and dipping sauce for flavor. This one builds flavor right into the roll itself.
Alexandra’s Pikliz® Spicy Pepper Relish adds a bright tang, a little heat, crunchy texture, and a more layered bite. That makes these spring rolls feel more memorable and more flavorful than a standard version.
Place the rice noodles in a bowl with hot water and a pinch of salt. Soak for 8 to 10 minutes, or until soft. Drain and set aside.
Season the shrimp with garlic powder, onion powder, and salt. Heat a skillet with a little olive oil or avocado oil. Sear the shrimp for about 3 minutes per side, until cooked through and lightly golden. Remove from the skillet and set aside.
Cut the carrot, cucumber, and red bell pepper into thin strips. Lightly season with salt and a little white vinegar. Set aside.
In a shallow dish, mix water with a little soy sauce. Dip each rice paper sheet for about 5 seconds, just until soft. Place it on a clean towel or cutting board.
To help structure the roll, place two lettuce leaves crossed in the center.
Layer the filling in this order: shrimp, lettuce, rice noodles, carrot, cucumber, cilantro or parsley, and Alexandra’s Pikliz® Spicy Pepper Relish.
Fold in the sides and roll tightly.
Serve immediately with extra Alexandra’s Pikliz® Spicy Pepper Relish on the side.
Use fresh vegetables for the best crunch. Do not over-soak the rice paper or it may tear. Let the noodles drain well so the rolls stay light instead of soggy. If you want a vegetarian version, replace the shrimp with seared tofu or leave it out entirely.
For entertaining, you can prep all the fillings ahead of time and assemble just before serving.
These spring rolls pair well with grilled chicken, simple rice dishes, fresh fruit, light soups, crisp salads, or extra relish on the side for more heat and texture.
They also make a great starter for a Caribbean-inspired dinner spread.
Yes, but they are best the day they are made. If making ahead, cover them with a slightly damp paper towel and store in an airtight container so the rice paper stays soft.
